Shrimp Dumplings Stuffed in Shiitake

Shihomi will make “Ebi-shinjo (steamed shrimp dumplings) “ stuffed in shiitake mushrooms. Usually these are made with yam potatoes and egg whites and then steamed, but this time, we used “hanpen (Japanese soft fish cakes) to easily make the dumplings fluffy and cooked them in a covered frying pan.

6 shiitake mushroom
10 shrimp
1 hanpen
20cm green onion
1/2 tsp salt
1 tsp ginger (grated)
1 tbsp oil
1 tbsp sake (for steaming)
potato starch

[Ankake Sauce]
140ml water
1 tbsp shiro-dash (concentrated type)
1 tsp soy sauce
1/2 tsp sake
1 tsp mirin
1 tsp potato starch
green part of green onion (for decoration)
