Miso Braised Salmon Salad

The New Year is also a time where we tend to eat too much, so in this episode, Kei will be making a dish that will help reset your over-worked stomach and intestines.
In Japan, it is customary to eat rice porridge with 7 herbs to rest your stomach on January 7th, but it’s important to eat high-quality protein and not just vegetables!
So, in this episode, we will introduce a salad using salmon which contains vitamins and unsaturated fat.
Eating just the salmon is also very delicious!

[ Ingredients ]
・ Salmon (fillet) … 2 slices
・ Miso … 1 tbsp
・ Soy sauce … 1/2 tbsp
・ Mirin … 1 tsp
・ Lemon juice … 1 tsp
・ Olive oil … 1 tbsp
・ Asparagus … 4
・ Carrot … 3 cm
・ Mixed green leaves … 80g

(dressing)
・ Olive oil … 2 tbsp
・ Lemon juice … 1 tsp
・ Soy sauce … 1 tbsp
・ Salt and pepper

味噌風味のサーモンサラダ

お正月の食べ過ぎで疲れた胃腸をリセットする料理をけいちゃんに作ってもらいます。
1月7日は七草粥で胃腸を休める風習が日本にはありますが、リセット中は野菜だけではなく、良質なタンパク質も重要!
ということで今日ご紹介するのはビタミンと良質な油も豊富なサーモンを使ったサラダです。
サーモンの強力な抗酸化作用のあるアスタキサンチンや、ビタミンDやビタミンEなどの脂溶性のビタミンは、油と一緒に食べると効率よく吸収できそう。

サーモンだけで食べてもとっても美味しいですよ!
