Kao Man Gai

Moepero made Kao man gai (Thai chicken rice) by cooking the chicken with residual heat.
We made the sauce using condiments that you can find easily in Japanese markets.


[Chicken soup & boiled chicken]
1 chicken thigh
1L water
1 piece ginger
1 piece garlic
1 green part of green onion
1/2 tbsp fish sauce (nam pla)
1/4 tsp salt

[rice]
1 cup (180cc) Jasmine rice
180ml chicken soup stock
1/2 piece garlic
1cm ginger
1 tbsp oil

[Sauce]
1-2 fresh chili pepper (you can use dried chili)
1 piece ginger
1 piece garlic
10cm green onion (including the amount scattered in the soup)
1 tsp miso
2 tbsp soy sauce
1 tbsp sesame oil
2 tsp fish sauce (nam pla)
2 tsp sweet chili sauce
1/2 tbsp sugar

[Garnish]
1/2 cucumber
coriander
petit tomatoes

カオマンガイ

今回も鶏出汁を使ったエスニック、余熱調理で鶏肉をジューシーに仕上げたカオマンガイをもえぺろちゃんに作ってもらいました。
日本で手に入りやすい調味料でアレンジしたソースと一緒にいただきます。
