Creamy Lemon Chicken with Couscous

Moepero made creamy lemon chicken with couscous that was prepared with chicken broth.
This dish is creamy, yet the lemon makes it light and refreshing so it’s perfect for summer!
The chicken was marinated overnight in a magical Japanese condiment called “Shiokoji,” so the meat becomes soft and the umami increases.


1 chicken thigh (marinate the chicken with 1 tbsp shio-koji and leave in the fridge overnight)
100ml chicken soup stock
2-3 tbsp lemon juice
120ml milk
1/4 onion
1 garlic
8 mushroom
3 tbsp white wine
1-2 tbsp flour
1 tbsp olive oil
1/2 tsp salt
black pepper
5 basil leaves

鶏肉のレモンクリームソース
クスクス添え

今回はもえぺろちゃんに鶏肉のレモンクリームソースと鶏出汁で蒸らしたクスクスを作ってもらいました。
クリーミー、でもレモンソースでさっぱりと、夏にぴったりのお料理ですね!
鶏肉は、塩麹に一晩漬けることで、やわからく旨味もアップ。
クスクスは雑穀のようにつぶつぶしているのですが、実はこれ、パスタの一種。世界最小のパスタとも言われて、その原料はデュラムセモリナ粉です。
クスクスは加熱後に乾燥させてあるので、同量の熱湯を加えるだけで簡単にもどり、実はとっても使い勝手の良い食材なので、レパートリーに是非取り入れたいですね!
