Deli-Style Quinoa Salad

Kei made a deli-style salad by preparing the nutritious superfood, quinoa, with vegetable broth. Colorful and healthy, this salad is a treat to the eyes and body!

1/2 cup quinoa
1 cup vegetable broth
25g black olives
1/2 piece paprika (red)
1/4 piece purple onion
1/2 cucumber
4 cherry tomato (yellow)
1/2 cup chopped parsley
feta cheese (pickled in oil)
3 tbsp olive oil
2 tbsp lemon juice
1.5 tbsp vinegar
1 piece garlic
salt and pepper
