Scandinavian Cheese Tasting with Lectures by Mari🧀
We tasted 9 kinds of Scandinavian cheeses & unique dessert cheese called ‘Kase Stollen’ from Mirasaka Fromage in Hiroshima this time.

There are only a few types of Scandinavian cheese imported into Japan, and most of them are semi-hard cheeses that have mild flavors and are easy to eat.
Gjetost , the caramel-colored cheese made by boiling goat milk whey and buttermilk or milk, was very rare for us. It is sweet and tastes like caramel. In Norway, they often eat it on bread for breakfast.
Kese Stollen is a fresh cheese made in the image of the traditional German Christmas confectionery Stollen. Contains dried fruits and nuts.
Since Christmas is just around the corner, the table, side dishes, and desserts all have the image of Christmas 🎄🎅✨
This time, as a side dish, salmon and yuzu marinade, and Japanese crown daisy Christmas wreath salad. For dessert, matcha tiramisu made by Mari and flower cupcakes made by me.
The food was a lot and everyone went back home full 😊

チーズシュヴァリエMariによる、北欧チーズのテイスティング会を開催しました 🧀

チーズについてのレクチャーを受けながら、9種類のチーズと広島の三良坂フロマージュさんの季節限定のケーゼ・シュトレンを味わっていただきました。
日本に輸入される北欧のチーズは種類が少ないとのことで、セミハード系のクセがなく食べやすいチーズが多かったのですが、珍しいところでは、イエオストという山羊乳のホエーとバターミルクやミルクを煮詰めて作るキャラメル色のチーズ（日本では正確にはチーズに分類されないそう）。甘みがあり味もキャラメルのよう。ノルウェーではパンに乗せて朝食などにいただくことが多いのだとか。
ドイツのクリスマスの伝統菓子シュトレンをイメージして作ったケーゼ・シュトレンは、フレッシュチーズにドライフルーツやナッツが練り込まれていました。
クリスマス間近ということもあって、テーブルも副菜もデザートもクリスマス仕様です 🎄🎅✨
今回は付け合わせに、サーモンと柚子のマリネ、春菊のクリスマスリースサラダ。デザートはMari特製の抹茶ティラミスとあんこで作ったフラワーケーキと盛り沢山！
