Notice Dashi-maki Tamago (Japanese Omelette) July 10, 2020 / by Junko There are many kinds of soup stock in Japan, the representative being “dashi” that is made from bonito flake and kombu kelp. In this episode, Shihomi introduced how to make this basic dashi, along with “Dashi-maki tamago” which is a delicious Japanese omelette that uses dashi. [Dashi of kelp and dried bonito flakes] 10g kombu kelp 15g bonito flake 1 L water [Dashi-maki tamago] 3 eggs 50ml dash (soup stock) 1 tsp soy sauce 1/2 tbsp mirin 1/4 tsp salt oil grated daikon radish for garnish Junko There are so many Japanese dishes and cultures that are not well known outside of Japan and I’m happy to introduce them to you!
