The “Shio Koji” is a traditional condiment made by fermenting “Koji (malted rice)” and salt. Using this instead of salt adds umami and depth to your cooking. In this lesson, we will show you how to make Shio Koji, and make 4 easy & healthy dishes using Shio Koji and Shoyu Koji (fermented Koji & soy sauce).
