Japanese style cabbage & cheese toast

This is one of my favorite toasts for breakfast.

Super easy and nutritious. Even though cabbage is very low in calories, it is loaded with vitamins and minerals. With this toast, you can eat a lot of cabbage. I use a quite amount of cabbage that almost overflows from the bread. You may think the amount of cabbage is too much but the more cabbage the better texture and more delicious. Perfect for a healthy breakfast!

Ingredients

*ponzu : a mixture of Japanese citrus juice (sudachi, yuzu, and kabosu), soy sauce, mirin, and dashi.

Instructions

  1. Preheat oven to 220 degrees.
  2. Spread the butter on a slice of bread (optional).
  3. Wash the cabbage and pat dry using a kitchen towel. Thinly slice the cabbage.
  4. In a bowl, mix soy sauce, mirin, and mayonnaise. Add the sliced cabbage and mix well.
  5. Place the bread slice on a baking tray. Layer the cabbage and the cheese over the cabbage. *Do this right away after you mix cabbage and seasoning as the water comes out of the cabbage.
  6. Bake for 8 minutes. Serve it hot. Sprinkle pepper if you like. Enjoy!

I use a Japanese fish grill. It takes only 3-4 min.
