I guess I don’t need to explain what is Tempura ‘天麩羅’. It is one of the most well known Japanese dishes in the world.
It is a very simple food which needs few ingredients and seems to be very easy to make. But if you don’t know how to prepare each of the ingredients right, and good recipes and methods, your Tempura ends with heavy, oily results.
In this class, you will learn the secrets of light and crispy Tempura! Common ingredients to fry are shrimp, squid, green bell pepper, eggplant, sweet potatoes, pumpkin, carrot, mushrooms, and shiso (perilla leaves). Fresh ingredients will be chosen for you depending on the season and market availability.
We will be also making Kakiage. It is a type of tempura of thinly cut vegetables. Kakiage tempura is a popular side dish that you often see it on the top of soba noodle and udon noodle. My mom often made Kakiage-don (a rice bowl topped with Kakiage tempura. she also added eggs as my dad loved it so much) with the leftovers next day.
You will also learn decorative cut using a knife and how to make the special dipping sauce that goes perfectly with Tempura!

Dear our wonderful members and guests,It is with deep sadness to announce that we have decided to close JJ Kitchen for the time being.During the past 5 years, we have enjoyed cooking and discussing cultural issues with each and everyone. However, Junko had a stroke in June and is currently in the hospital undergoing physiotherapy. Since we do not know how long this will take, we have come to the conclusion to close our doors.
