Saikyoyaki (西京焼き) is a very popular traditional Japanese grilled fish or meat dish you get after you marinate the fish/meat in the seasoned miso marinade. This dish is a specialty of Kyoto and the local white miso called Saikyo Miso (西京味噌) is used.
This method of marinating fish in miso paste was used in Japan to preserve fish in times before refrigeration and continues to be consumed in the present day for the rich flavor miso adds to the dish.
Fishes with high-fat content such as salmon, Sawara (spanish mackerel), Gindara(black cod/sablefish) or Buri (yeallowtail) are suitable for this dish.
It is simple to make and it is just as delicious as the dishes you get at restaurants 🙂
In this class, you will learn an authentic tasty recipe for Miso-marinade fish. You will also learn how to make dashi (fish and kelp stock) from scratch and make Chawanmushi (savory Japanese egg custard) and miso soup with it.
