We can make the dish without meat. Please note, we can replace/remove ingredients as long as we are given prior notice on your booking.
We would welcome you contacting us before booking to check on the suitability of ingredients used in the menu if you have any dietary requirements.Otherwise, please inform us of any dietary requests on booking. If we do not get prior notice we cannot amend arrangements.
Atsuage (厚揚げ), is deep-fried tofu. The outside will be crisp and golden and the inside will be still raw and white, like regular tofu with a fried skin. The texture is a little chewy like meat.
We like it grilled, simmered or fried with other ingredients. There are so many ways to enjoy it.
In this lesson, we will make stir-fried eggplant and atsuage with niku-miso (ground pork/chicken and miso) sauce. This savory and a little spicy dish will whet your appetite! I can eat several bowls of rice with it.

Hello Everyone,After 2 and a half years after Junko’s stroke, we will gradually be opening our doors to JJ Kitchen again.However, as Junko is still recovering, we will be changing our methods a bit.For the time being, we will only be accepting PRIVATE CLASSES (when we are available, and will not be holding our regular cooking classes, membership classes nor kids cooking classes (children can participate in the private lessons with the adults).Please contact us if you are interested in taking a private class from us.
