
Atsuage (厚揚げ), is deep-fried tofu. The outside will be crisp and golden and the inside will be still raw and white, like regular tofu with a fried skin. The texture is a little chewy like meat.
We like it grilled, simmered or fried with other ingredients. There are so many ways to enjoy it.
In this lesson, we will make stir-fried eggplant and atsuage with niku-miso (ground pork/chicken and miso) sauce.
