Have you ever tried tantanmen (tantan noodle)?
Tantanmen (tantan ramen) is the Japanese version of Sichuan dan dan noodle. Dan dan noodle does not come with soup but Tantanmen comes with spicy chili flavored creamy broth made of sesame paste. Both have spicy pork mince on the top. Tantanmen is extremely tasty while also being surprisingly easy to make! My recipe is as delicious as that of a specialty store and I’m sure you will get addicted to this spicy but nutty sweet sesame broth noodle!
I mix chicken broth and soy milk to make soup. Soy milk makes the spiciness of chili oil milder. For those who are not good at spicy foods, we can also make mild tantanmen. So no worries!
In this class, you will learn;
– Japanese creamy tantan soup from scratch. *We are not making the noodles and will use store-bought noodles. – Nikumiso (pork topping seasoned with miso) *For those who do not eat pork, we will replace pork with beef or chicken 🙂 – Fried pork gyoza (dumplings) with fresh ingredients, technique about putting the filling in the dough, using store-bought gyoza skins (wrappers) which I think are widely available in local supermarkets around the world. *If you are interested in making wrappers from scratch, you may like to take this Gyoza intensive class.
* A welcome drink and a glass of wine, beer or sake are included. Bringing in your own bottles is welcome!* Menus are subject to change based on the availability of items in the market.

Hello Everyone,After 2 and a half years after Junko’s stroke, we will gradually be opening our doors to JJ Kitchen again.However, as Junko is still recovering, we will be changing our methods a bit.For the time being, we will only be accepting PRIVATE CLASSES (when we are available, and will not be holding our regular cooking classes, membership classes nor kids cooking classes (children can participate in the private lessons with the adults).Please contact us if you are interested in taking a private class from us.
