Matsutake Rice & Soup

Popular fall delicacies are mushrooms, but have you heard of Matsutake mushrooms?
The Japanese have long loved the aroma of this mushroom, but as they only grow in the wild, they can be very expensive and considered a luxury, so we don’t normally see it on our dinner tables.
In this episode, Moepero will make rice cooked with Matsutake mushrooms and Matsutake soup.

Ingredients
[Matsutake Mushroom Rice]
2 cups rice (180cc Japanese cup)
1 matsutake mushroom
10g kombu kelp
600ml water (use 450ml)
1 tbsp and 1/4 tbsp soy sauce
2 tbsp sake
2 knobs salt

[Matsutake Soup]
1 matsutake mushroom (small)
1/2 tofu (soft)
5g kombu kelp
300ml water
1/2 tbsp sake
1/2 tbsp soy sauce
a pinch of salt
2 mitsuba (Japanese herb)

松茸ご飯とお吸い物

秋の味覚の代表といえばキノコ!
その中でも天然物しかない松茸はこの時期しか食べられないので、貴重ですね。
今回はもえぺろちゃんに松茸ご飯とお吸い物を作ってもらいました。
使うお出汁は松茸の味と香りを引き出すためには昆布だしです。
