Dashi-maki Tamago (Japanese Omelette)

There are many kinds of soup stock in Japan, the representative being “dashi” that is made from bonito flake and kombu kelp.
In this episode, Shihomi introduced how to make this basic dashi, along with “Dashi-maki tamago” which is a delicious Japanese omelette that uses dashi.


[Dashi of kelp and dried bonito flakes]
10g kombu kelp
15g bonito flake
1 L water

[Dashi-maki tamago]
3 eggs
50ml dash (soup stock)
1 tsp soy sauce
1/2 tbsp mirin
1/4 tsp salt
oil
grated daikon radish for garnish

今回はしほみんに昆布と鰹節の合わせ出汁をとって、それを使っただし巻き卵を作ってもらいました。
